1/2 cup water

Puree the tomatoes, ginger, and green pepper together.

Prepare 8 oz of baby green peas and 1/3 pound of paneer, slicing the paneer into pieces.

Heat a pan on medium-high and add a couple of drops of oil.

Add the paneer pieces to the pan and let them brown on one side, then turn to brown the other side until golden brown.

Cut the browned paneer into small cubes.

Heat the pan again on medium-high and add 2 tablespoons of oil.

Add a pinch of hing, 1 teaspoon of cumin seeds, 2 bay leaves, 1 inch stick of cinnamon, and 2 cloves to the hot oil and stir for a few seconds.

Add the tomato puree to the pan and stir.

Add 3 teaspoons of ground coriander, 1/2 teaspoon of turmeric, and 1 teaspoon of paprika to the mixture.

Add 1 teaspoon of salt and cover the pan, letting it simmer until the tomato reduces by half, about 3-4 minutes.

Add the green peas and paneer to the pan along with 1/2 cup of water and 1 teaspoon of sugar.

Cover and cook for another 2-3 minutes.

Dissolve 1 tablespoon of cornstarch in 1/2 cup of water and add it to the pan, mixing well.

Let it cook for another 2-3 minutes, checking that the green peas are tender.

If desired, add more water for a thinner gravy.

Turn off the heat and transfer the dish to a serving dish, serving hot with naan, roti, paratha, or plain rice.
