Moong Dal 1 cup
Maida 1 cup
Salt 2 tsp
Baking Soda ½ tsp
Ghee 2 tbsp
Water as required
Oil as required
Cumin Seeds 2 tsp
Chopped Ginger 1 tsp
Hing ¼ tsp
Green Chillies 3
Garam Masala 1 tsp
Red Chilli Powder 2 tsp
Khus Khus 1 tsp
Saunf Powder 1 tsp
Tamarind 1 tbsp
Sugar ½ tsp
Imli Chutney for serving

Soak the moong dal for a few hours and then drain.

In a pan, heat ghee and add cumin seeds, chopped ginger, hing, and green chillies. Sauté until fragrant.

Add the soaked moong dal along with garam masala, red chilli powder, khus khus, saunf powder, tamarind, and sugar. Cook until the dal is soft and the mixture is well combined. Let it cool.

In a bowl, mix maida, salt, baking soda, and enough water to form a dough. Knead until smooth and let it rest.

Divide the dough into small balls and flatten them. Place a spoonful of the moong dal mixture in the center and fold the dough over to seal it.

Heat oil in a pan for deep frying. Fry the kachoris until golden brown and crispy.

Serve hot with imli chutney.
