1 tsp Salt (for dough)

1.5 cups Water (for dough)
1 cup Dal Chana
1/2 tsp Salt (for filling)
1.5 tbs Ginger Garlic Paste (for filling)
1/2 tsp Turmeric (for filling)
1 cup Water (for boiling filling)
500g Boiled Potato
1/4 cup Oil
1 tbs Ginger Garlic Paste (for tarkari)
2 Tomatoes
3/4 tsp Salt (for tarkari)
1 tsp Red Chili Powder
1/2 tsp Chili Flakes
1/4 tsp Turmeric (for tarkari)
1/2 tsp Coriander Powder
1 cup Water (for tarkari)
2 Green Chilies
1/4 tsp Kalonji
1 tsp Kasuri Methi
1 tbs Mix Achar

Prepare the kachori dough by mixing maida, salt, caraway seeds, and water. Knead until smooth and let it rest.

For the filling, boil dal chana in water until soft. Drain and mix with salt, ginger garlic paste, and turmeric.

Prepare tarkari by heating oil in a pan, adding ginger garlic paste, chopped tomatoes, and spices. Cook until tomatoes are soft.

Add boiled potatoes to the tarkari mixture and stir well. Adjust seasoning and add water if needed.

Roll out the kachori dough, fill with dal mixture, and seal.

Deep fry the kachoris until golden brown and serve with tarkari.
