Traditionally, these deep-fried pastries are filled with a spiced urad dal mixture, showcasing the rich culinary heritage of Indian street food. Today, they are loved across the country and often served with tangy chutneys or yogurt, making them a favorite for gatherings and special occasions.

Soak 1 cup urad dal in water for 3 hours.
Drain and rinse the urad dal thoroughly.
Grind the urad dal coarsely using a stone grinder (silbatta) or a blender without adding water.
Mix in 2 green chilies and black pepper while grinding.
In a bowl, combine 2 cups all-purpose flour and a little salt, then knead into a dough using water.
Do not add oil to the dough; it should be a dry dough for better texture.
Make small balls from the dough and flatten them slightly.
Fill each disc with the urad dal mixture and seal the edges by pinching them together.
Roll out the filled dough gently without making it too thin.
Heat mustard oil in a deep frying pan until it begins to smoke.
Deep fry the kachoris in the hot oil until golden brown, ensuring the heat is medium to low to cook them thoroughly inside.
Remove the kachoris and drain on paper towels.
