1 cup red lentils
4 cups water
1 medium onion, chopped
2 cloves garlic, minced
1 inch ginger, grated
2 tomatoes, chopped
1 tsp turmeric powder
1 tsp cumin seeds
1 tsp coriander powder
1-2 green chilies, slit
2 tbsp vegetable oil
Salt to taste
Fresh cilantro for garnish

Rinse the red lentils under cold water until the water runs clear.

In a large pot, combine the lentils and water. Bring to a boil, then reduce heat and simmer for about 20 minutes, or until the lentils are soft.

In a separate pan, heat the vegetable oil over medium heat. Add the cumin seeds and let them sizzle for a few seconds.

Add the chopped onion to the pan and sauté until golden brown.

Stir in the minced garlic, grated ginger, and slit green chilies. Sauté for another 2-3 minutes until fragrant.

Add the chopped tomatoes, turmeric powder, coriander powder, and salt. Cook until the tomatoes are soft and the oil starts to separate from the mixture.

Pour the onion-tomato mixture into the cooked lentils. Stir well to combine.

Simmer the dahl for an additional 5-10 minutes to allow the flavors to meld together.

Adjust seasoning if necessary and add more water if you prefer a thinner consistency.
