1 medium potato, boiled & grated
150g tofu (firm or malai tofu), grated/mashed
50g cashew cream solids or almond flour paste (mawa substitute)
Salt to taste
½ tsp black pepper
½ inch ginger, grated
Pinch of baking soda
1 tbsp corn flour or besan (binding)
Oil for frying or air frying
¼ cup chopped dry fruits (cashews, raisins, almonds)
½ tbsp chopped fresh coriander
½ tsp cardamom powder
1 tsp grated tofu or kofta mix
2 tbsp oil (e.g., mustard or sunflower oil)
1 tbsp vegan butter or ghee (optional)
2 bay leaves
3–4 green cardamom pods
6–8 black peppercorns
½ tbsp cumin seeds
2 medium onions, sliced
1 tbsp coriander powder
1 tbsp Kashmiri red chili powder
½ tsp turmeric
1 inch ginger + 3–4 garlic cloves (ground)
2 medium tomatoes, chopped
½ cup soaked cashews
½ tsp kasuri methi (optional)
Salt to taste
