1 cup paneer, cubed
1 cup boiled and pureed spinach (palak)
1 cup curd mixed with water
1 tsp cumin seeds
1 cup sliced onions
½ cup chopped garlic
1 tbsp coriander paste
1 tsp turmeric powder
1 tsp coriander powder
1 tsp red chilli powder
10 large spinach (palak) leaves
1 cup cheese mix (grated mozzarella and processed cheese)
1 lemon
salt to taste
½ tsp black salt
oil for cooking
1 tbsp ghee
1 tbsp fresh cream (for garnish)
1 tsp red chilli powder (for garnish)
5-6 onion rings (for garnish)
1-2 lemon wedges (for garnish)

Blanch spinach (palak) leaves till soft and malleable, dip them in ice cold water to prevent further cooking and color change, and keep aside.

In a pan, heat oil, add cumin seeds and let it sputter.

Add sliced onions and let them turn golden brown. Add chopped garlic and sauté.

Add the curd and water mixture.

Add turmeric powder, red chilli powder, coriander powder, and black salt. Cook till it all comes together.

Add the palak puree and coriander paste. Then add the cubed paneer and cook it together.

Add salt and squeeze some lemon juice.

Once the mixture is ready, cool it (the palak paneer needs to be of a thick consistency).

Add the cheese mix to the palak paneer mixture.

In the blanched leaves, add this mixture and roll it together.

Heat ghee in a pan and sear the rolled rolls.

Garnish with fresh cream and red chilli powder on top. Serve with onion rings and lemon wedges.
