Blend 3 medium tomatoes, 1 green chili, and ginger to a smooth paste.

Heat oil in a pot over medium heat until not smoking.

Add dry bay leaves, 3 green cardamoms, and a cinnamon stick; stir for a few seconds.

Add chopped onions and a sprinkle of salt; fry until onions turn pinkish.

Reduce heat to low and add 2 teaspoons kashmiri red chili powder, 1 teaspoon turmeric powder, 1 heaped teaspoon ground coriander, and 0.5 teaspoon ground cumin; fry for a few seconds.

Add the blended tomato mixture and heat back up to medium-high; fry until mixture turns jelly-like.

Add paneer and gently fold into the spice mixture.

Add 1 cup of hot water, kasuri methi, garam masala powder, and 1 teaspoon sugar (optional); cover and cook on low heat for 5 minutes.

Add 2 tablespoons of Mexican crema (or alternative) and cover on low heat for another 5 minutes.

Remove whole spices that float on top, taste and adjust seasonings.
