Jalapeños provide heat with lower cost.
Add a little bit of olive oil to the pan.
Add the onions to the pan and sauté until soft and translucent.
Add the leg of lamb to the onions and cook for a few minutes.
Add the ginger and garlic to the meat and onions, cooking for a few more minutes.
Add salt, pepper, and turmeric powder to the mixture.
Prepare hot water in a kettle and add it to the pan, turning the temperature to medium.
Cover the pan and let the meat cook for about 30 minutes.
After 30 minutes, add a small amount of spinach (about half a cup) to a food processor and blend until smooth.
Add the blended spinach back to the pot with the meat.
Add the chopped rhubarb, cilantro, and Thai chilies to the pot.
Prepare the rice by washing it and letting it sit in water for 30 minutes to an hour before boiling.
Boil the rice and add cumin powder and cardamom to it while cooking.
Mix the rice with the spinach and meat mixture once both are cooked.
