2 lbs beef shank
8 cups water
1 medium onion, quartered
2 medium potatoes, peeled and quartered
1 cup corn on the cob, cut into pieces
1 cup green beans, trimmed
1/2 cup cabbage, chopped
2 tsp salt
1/2 tsp black pepper
2 tbsp fish sauce (optional)

In a large pot, combine the beef shank and water. Bring to a boil over medium-high heat.

Once boiling, reduce the heat to medium-low and skim off any foam that rises to the surface.

Add the quartered onion, salt, and black pepper to the pot. Cover and simmer for about 1.5 to 2 hours, or until the beef is tender.

Add the potatoes and corn to the pot. Continue to simmer for another 15 minutes.

Stir in the green beans and cabbage, and cook for an additional 5-10 minutes until the vegetables are tender.

If using, add fish sauce for extra flavor and stir well.

Taste and adjust seasoning if necessary.

Remove from heat and let it sit for a few minutes before serving.
