3.5 lbs pork St. Louis spare ribs
2 medium potatoes, peeled and quartered
1 medium carrot, peeled and sliced into thick rounds
1 bunch spring onions, trimmed
Half of medium onion, peeled (quartered)
6 cloves garlic, peeled
3 serrano peppers (optional, for a mild kick)
1 small cabbage, quartered
1 bunch green onions, cut into pieces
1 tsp whole peppercorns
4 tsp of salt
10-12 cups water (or enough to cover ribs)

Slice potatoes, carrot, spring onions, onion, cabbage, green onions.

Clean and pat dry the pork spare ribs with paper towels.

Remove the film or membrane.

Place the ribs in a large pot and add enough water to cover the ribs.

Cover and bring to a boil for 25 minutes.

Skim off any scum, then add 3 tsp salt, 1 tsp peppercorns, a bunch of spring onions, and 6 cloves of garlic.

Cover and cook for another 35 minutes on medium heat.

Add the sliced potatoes, carrot, and onion. Cover and cook for 12-15 minutes or until vegetables are fork-tender.

Add another 1 tsp of salt to taste.

Add the cabbage and green onions. Cook for another 3-5 minutes or until cabbage is tender but not overcooked.

Turn off the heat.
