1 cup brown sugar
2 head garlic peeled & minced
2 tablespoons soy sauce
2 tablespoons vinegar
1 tablespoon salt
2 teaspoons ground black pepper
2 teaspoons paprika
2 tablespoons cornstarch
1 cup vinegar
1/4 cup water
3 tbsp fish sauce (patis)
1 whole red onion, minced
2 cloves of garlic, minced
1 green chili long, chopped
1 tbsp red chili flakes
1 tbsp sugar
Ground black pepper

In a bowl, combine ground pork, brown sugar, minced garlic, soy sauce, vinegar, salt, ground black pepper, paprika, and cornstarch. Mix well until fully incorporated.

Form the mixture into sausage shapes or patties.

Refrigerate for a few hours or overnight to allow flavors to meld.

For the vinegar dipping sauce, combine vinegar, water, fish sauce, minced red onion, minced garlic, chopped green chili, red chili flakes, sugar, and ground black pepper in a bowl. Mix well.
