Cook longganisa in a pan without oil for about 4 minutes, breaking it up as it cooks.

Add day old rice to the garlic and mix well, breaking up clumps, and season with salt.
In the same pan, add butter and crack in eggs, mixing them until just slightly undercooked.
Layer the crema, garlic rice, longganisa, scrambled eggs, hash brown, and pickled red onion onto a tortilla.
Roll the tortilla tightly to form a burrito and seal it on a flat top grill for 2 minutes.
