1 lb beef chuck, cut into 1-inch cubes
2 tbsp vegetable oil
1 large onion, chopped
3 cloves garlic, minced
1 tbsp ginger, minced
2 tbsp curry powder
1 tsp cumin
1/2 tsp turmeric
1/2 tsp chili powder
1 can (14 oz) coconut milk
1 cup beef broth
2 cups carrots, sliced
2 cups potatoes, diced
Salt and pepper to taste
Fresh cilantro for garnish

Heat the vegetable oil in a large pot over medium heat.

Add the chopped onion and sauté until translucent, about 5 minutes.

Stir in the minced garlic and ginger, cooking for an additional minute until fragrant.

Add the beef cubes to the pot, browning them on all sides, about 5-7 minutes.

Sprinkle the curry powder, cumin, turmeric, and chili powder over the beef, stirring to coat evenly.

Pour in the coconut milk and beef broth, bringing the mixture to a simmer.

Add the sliced carrots and diced potatoes, stirring to combine.

Cover the pot and let it simmer on low heat for about 1.5 to 2 hours, or until the beef is tender.
