Traditionally served during family gatherings and celebrations, this dish showcases the vibrant spices and slow-cooked techniques that define Jamaican cuisine. Chicken is lower in fat, while pork is usually less expensive.
Wash the beef properly and cut it into bite-sized pieces.
Add seasoning to the beef: onion, scallion, scotch bonnet pepper, thyme, chopped garlic, ginger, all-purpose seasoning, garlic powder, curry powder, a little oil, pimento seed, and oxtail seasoning.
Let the beef marinate for about 2 hours at room temperature.
Heat oil in a pot and add curry powder to sauté it.
Add the seasoned beef to the pot, spreading it out without fully mixing it, and cover to let it cook on low heat for about 5 minutes.
Transfer the beef to a pressure cooker, ensuring to add hot water without pouring it directly on the meat to maintain its color.
Add a few pieces of garlic and scallion to the pressure cooker for flavor.
Pressure cook the beef for about 20 minutes.
Remove the beef from the pressure cooker and place it back into the pot.
Add fresh seasoning: Irish potato, onion, scallion, garlic, and adjust seasoning with garlic powder and Maggie all-purpose seasoning as needed.
Cover the pot and let it simmer together, checking the beef for tenderness.
