Rinse the rice under cold water until the water runs clear.

In a large pot, combine coconut milk, water, and drained kidney beans.

Add green onions, garlic, thyme, allspice, scotch bonnet pepper, salt, and black pepper to the pot.

Bring the mixture to a boil over medium heat.

Stir in the rinsed rice and bay leaves.

Reduce heat to low, cover the pot, and simmer for 20-25 minutes until rice is tender.

Remove from heat and let it sit covered for 5 minutes.

Fluff the rice with a fork and stir in lime juice and butter.

Discard the scotch bonnet pepper and bay leaves before serving.
