Fried Bodi & Saltfish

1 piece BONELESS SALTFISH
1 bundle BODI (washed & cut into pieces)
1 potspoon VEGETABLE OIL
1 large ONION (chopped)
5 cloves GARLIC (chopped)
5 leaves CHADON BENI / CULANTRO (chopped)
5 PIMENTO PEPPERS (chopped)
1 large TOMATO (chopped)
Salt to taste
Hot pepper (optional)

Soak the boneless saltfish to remove excess salt, then boil until tender.

In a pan, heat the vegetable oil over medium heat.

Add the chopped onion and garlic, sauté until fragrant.

Add the chopped bodi and cook until tender.

Stir in the chopped chadon beni, pimento peppers, and tomato.

Season with salt and hot pepper to taste, and mix well.
