Curry Fish

1 lb fish fillets (such as tilapia or cod)
2 tbsp curry powder
1 onion, chopped
2 cloves garlic, minced
1 inch ginger, grated
1 can (14 oz) coconut milk
1 tbsp vegetable oil
1 tsp salt
1/2 tsp black pepper
1/2 tsp turmeric
1/2 tsp chili powder (optional)
Fresh cilantro for garnish

Heat the vegetable oil in a large skillet over medium heat.

Add the chopped onion and sauté until translucent, about 5 minutes.

Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.

Add the curry powder, turmeric, and chili powder (if using), stirring to combine with the onion mixture.

Pour in the coconut milk and bring to a simmer, stirring occasionally.

Season the sauce with salt and black pepper.

Add the fish fillets to the skillet, gently spooning the sauce over them.

Cover and cook for about 8-10 minutes, or until the fish is cooked through and flakes easily with a fork.
