Heat 4 tablespoons of extra virgin olive oil in a large skillet.

Flour the fresh cod and lay it down in the oil to fry one side.

After about 2 and a half minutes, flip the fish to cook the other side for another couple of minutes.

Remove the fish from the skillet and set aside.

Add chopped zucchini, 2 tablespoons of garlic, chopped medium white onion, and chopped medium red tomato to the skillet.

Add 1 tablespoon of ginger and sauté the vegetables for a minute in the oil.

Pour in 1/2 can of coconut milk into the skillet with the vegetables.

Add Jamaican seasoning and about 1 tablespoon and a half of curry powder to the sauce.

Stir in green peppercorns and let the vegetables simmer in the sauce.

Return the fish to the skillet and let it cook in the sauce for about 4 to 5 minutes until the vegetables are thoroughly cooked.

Squeeze half a lime into the sauce and add parboiled potatoes.

Season with black pepper, about 10 rotations, and plate the dish.
