Jamaican Jerk Chicken

Cultural Context

Jamaican jerk chicken is a traditional dish that originated from the Maroons, descendants of enslaved Africans who escaped into the Jamaican mountains. The unique flavor comes from a blend of spices and cooking methods that reflect the island's diverse cultural influences. Jerk cooking is often associated with outdoor gatherings and celebrations, making it a popular choice for barbecues and parties.

1

Wash chicken in lemon juice.

2

In a bowl, combine olive oil, sugar, wet jerk seasoning, fresh thyme, scallion, garlic, browning sauce, and ketchup.

3

Massage the seasoning mixture into the chicken, ensuring it's well coated, including under the skin.

4

Let the chicken marinate for at least 1 hour or overnight.

5

Preheat the oven to 180°C (300°F).

6

Place foil on a tray and add water to prevent the chicken from drying out.

7

Add remaining fresh thyme, scallion, and garlic to the tray.

8

Brush olive oil on the grill to prevent sticking, then place the chicken on the grill.

9

Add any remaining seasoning on top of the chicken.

10

Bake in the oven at 180°C (300°F) for 35 minutes.

11

Remove chicken from the oven and add the liquid from the tray back onto the chicken.

12

Return chicken to the oven for an additional 25 minutes.

13

In a pot, combine 1 cup of pineapple juice and 2-2.5 tablespoons of ketchup, mixing until combined.

14

Add remaining seasoning and half a teaspoon of black pepper to the pot.

15

Bring the sauce to a boil over medium heat until thickened, adjusting sweetness with sugar if using water instead of juice.

16

Once thickened, turn off the stove and set the sauce aside.

17

Cut the jerk chicken and serve with the sauce.
