Wash and clean the chicken, removing excess fat and rinsing with distilled vinegar and lemon juice.

Prepare the jerk marinade by blending a medium sized onion, 4-5 scallions, 7 cloves of garlic, pimento seeds, a piece of habanero pepper, 1.5 teaspoons of nutmeg, 1 teaspoon of oil, 3 teaspoons of soy sauce, 3-4 stalks of thyme, and a little below a quarter cup of water until smooth.

Season the chicken with half tablespoon of garlic seasoning, half tablespoon of everything seasoning, half teaspoon of black pepper, a tablespoon of jerk seasoning, a little bit of salt, and some soy sauce.

Poke holes in the chicken to ensure the seasoning penetrates.

Allow the chicken to marinate for at least an hour or overnight.

Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).

Spray a baking pan with oil and place the chicken skin side up in the pan, adding some marinade on top without excess.

Bake the chicken uncovered for 30 minutes.

Baste the chicken with the juices using a turkey baster or spoon, then flip it over and bake for another 30 minutes uncovered.

Prepare the sauce by mixing the remaining seasoning from the chicken, adding a little water, 2 tablespoons of ketchup, 2 tablespoons of honey barbecue sauce, a little bit of Grace jerk marinade, 1 teaspoon of tomato paste, and 1 tablespoon of Worcestershire sauce, then simmer on low heat.

After the second 30 minutes, baste the chicken again, flip it skin side up, and bake for an additional 15-20 minutes for a charred look.
