Using 5 leg quarters that have been cleaned and washed in vinegar and lemon juice, make incisions in the chicken to allow seasonings to penetrate.

Prepare the spice mixture: add 1 tablespoon of dried jerk seasoning, 1 teaspoon of powdered allspice, 1 tablespoon of powdered garlic, 6-7 crushed pimento berries, 1/2 tablespoon of minced ginger, 2 tablespoons of mild jerk seasoning, 1/2 teaspoon of seasoning salt, and 1/2 tablespoon of browning to a bowl.

Mix all the spices together thoroughly.

Put on gloves and rub the spice mixture all over the chicken, ensuring to get it under the skin and into the incisions.

Cover the chicken with saran wrap and let it marinate in the refrigerator for at least 2 hours, preferably overnight.

Prepare the cooking pan by lightly greasing it with oil and adding 2 cups of water to the bottom.
