Dry roast cumin seeds and 2 dry red chilies on low heat for 1 minute.

Dry roast garlic cloves on low heat for 2 minutes.

Grind the roasted spices with green chilies, turmeric, chili powder, coriander powder, and water to a smooth paste.

Rub the spice mixture on both sides of the fish and set aside to marinate for 30 minutes.

Heat 3 tbsp of oil in a pan and fry the marinated fish pieces for 2 minutes on medium heat, then flip and fry for another 2 minutes.

Remove the fish to a plate and heat another 3 tbsp of oil in the same pan.

Fry the grated onions for 7-8 minutes on medium heat until light brown.

Add the masala paste and 1/2 tsp salt, and fry for 3 minutes until the oil separates.

Add kasuri methi and fry for 1 minute.

Add curry leaves and fry for 2 minutes.

Add tamarind juice and cover to cook for 5 minutes on low heat.

Flip the fish pieces and add coconut milk, mixing well.

Cover and cook for another 10 minutes on low heat.

Add chopped coriander and simmer for 2 minutes.
