1 1/2 Cup Basmati rice
1 Cup Water/Vegetable Stock
1 Cup Canned Coconut Milk
30g Kidney Beans
1 Medium Yellow Onion
5 Sprigs Thyme
4 Cloves of Garlic
1 Whole Scotch Bonnet Pepper
Salt
Black Pepper
1 tbsp All purpose Seasoning
1 Spring Onion

Rinse the basmati rice under cold water until the water runs clear.

In a pot, combine the rinsed rice, water or vegetable stock, coconut milk, kidney beans, chopped onion, thyme, minced garlic, and whole scotch bonnet pepper.

Season with salt, black pepper, and all-purpose seasoning.

Bring to a boil, then reduce heat to low and cover the pot.

Simmer for about 60 minutes or until the rice is cooked and the liquid is absorbed.

Remove the scotch bonnet pepper before serving and fluff the rice with a fork.
