2 cups white rice
1 cup dried red kidney beans
1 can unsweetened coconut milk
2 cups vegetable broth or water
2 sprigs fresh thyme
1 tsp. fresh ginger – chopped
1 sprigs Leeks
1 tbsp. celery - chopped
2 stalks scallion (green onion)
2 cloves garlic, minced
1 Scotch bonnet pepper (whole, for flavor — optional for heat)
½ tsp ground allspice
½ tsp black pepper

Cook or soak beans overnight, then cook until tender.

Saute the vegetables, herbs and spices and add to the beans.

Combine coconut milk, beans, and seasonings and simmer.

Add rice and water, stir gently to distribute ingredients evenly.

Cover tightly with foil to lock in moisture.

Bake at 350°F (175°C) for 45–55 minutes or until the rice is tender and fluffy.

Remove from oven, fluff with a fork, and let it rest for 10 minutes before serving.
