1 can (15 oz) canned kidney beans
1 can (13.5 oz) coconut milk
2 cups water
4 green onions
3 cloves garlic
1 teaspoon thyme
1 teaspoon allspice
1 scotch bonnet pepper
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons lime juice
2 bay leaves
2 tablespoons butter

Soak the small red peas for about five hours.

Boil the soaked peas with thyme, pimento berries, and garlic until tender, about 45 minutes.

Add coconut milk and seasonings (green seasoning and all-purpose seasoning) to the tender peas and simmer for about five minutes.

Wash the rice and set it aside.

Add the washed rice to the pot with the peas, then add scallions, more garlic, thyme, and habanero peppers.

Cover the pot and simmer on low heat to prevent the liquid from drying out too quickly.
