Beef Rezala

2 kg beef
1/2 cup mustard oil
2 tbsp ghee
4 bay leaves
4 stick cinnamon
10-12 cardamom
2 big cardamom
10-15 black pepper
2 star anise
2 cups sliced onions
2 tbsp garlic + ginger paste
1 tbsp chilli powder
1 tbsp turmeric powder
1 tsp coriander powder
1 tsp cumin powder
2 tbsp homemade gram masala
1 tbsp salt
1 tbsp tomato paste
250 ml water
50 g cashew nuts
1 cup fried onions
7-8 green chilli
250 ml yoghurt
2 tbsp lemon juice
1 tbsp sugar
1 tbsp kewra water

Heat mustard oil and ghee in a large pot.

Add bay leaves, stick cinnamon, cardamom, black pepper, and star anise; sauté for a few minutes.

Add sliced onions and cook until golden brown.

Stir in garlic and ginger paste, cooking until fragrant.

Add the beef and sear until browned on all sides.

Mix in chilli powder, turmeric powder, coriander powder, cumin powder, and salt; stir well.

Add tomato paste and water; bring to a boil.

Cover and simmer until the beef is tender.

Stir in cashew nuts, fried onions, green chillies, and yoghurt; mix well.

Add lemon juice, sugar, and kewra water; cook for a few more minutes.
