Badam Halwa

1 cup almond flour
1/2 cup ghee
1 cup sugar
2 cups milk
1/4 cup water
1/2 tsp cardamom powder
1/4 cup chopped nuts (cashews, pistachios)
1/4 cup raisins
a pinch of saffron (optional)

Heat ghee in a pan over medium heat.

Add almond flour to the ghee and roast until it turns golden brown, stirring continuously.

In a separate pot, combine milk and water, and bring to a boil.

Once boiling, add the sugar and stir until dissolved.

Pour the milk mixture into the roasted almond flour, stirring continuously to avoid lumps.

Add cardamom powder and saffron (if using), and mix well.

Cook on low heat until the mixture thickens and starts to leave the sides of the pan.

Add chopped nuts and raisins, and mix well.

Cook for an additional 2-3 minutes, then remove from heat.

Let it cool slightly before serving.
