Badam Halwa

1 cup Badam (Almonds)
1 cup Sugar
3/4 cup Milk
2 tbsp Saffron Milk (15-20 strands of saffron soaked in warm water)
3-4 tbsp Ghee (Clarified Butter)

Soak almonds in water for 2-3 hours and remove the skin by pressing it between thumb and index finger or soak in boiling water for 30 minutes.

Grind the almonds to a coarse paste by adding milk, ensuring it is not too smooth for the desired texture.

Melt some ghee in a non-stick pan, add the almond paste, and mix well. Then add sugar (1 cup for 1 cup of almonds) and stir until dissolved.

Add saffron milk for color and mix well, stirring continuously to prevent sticking.

Cook on low to medium heat for 15-20 minutes, stirring to prevent burning. Add a pinch of cardamom powder if desired and a tablespoon of ghee for richness before serving.
