Traditionally enjoyed after meals, it showcases the Italian love for coffee and rich flavors. Today, tiramisu has gained international fame and has inspired countless variations, from fruit-infused versions to vegan adaptations.

Make a big batch of espresso or strong coffee using a mocha pot.
Set a pot of water to simmer for a double boiler.
In a bowl, combine 1/2 cup dark rum and 1 1/2 cups dark coffee and set aside.
In a large bowl, add 16 ounces of room temperature mascarpone cheese and 1/4 cup dark rum, whisk until smooth.
Separate 6 egg whites from the yolks, reserving the whites.
Whisk 2/3 cup sugar into the egg yolks, then place over the simmering water to create a double boiler.
Whisk until the mixture thickens and turns light yellow, then incorporate it into the mascarpone mixture.
Refrigerate the mascarpone mixture while whipping the cream.
In a stand mixer, whip 2 cups of cold heavy cream and 2 teaspoons vanilla until stiff peaks form.
Fold the whipped cream into the mascarpone mixture until combined.
Dip ladyfingers briefly in the coffee-rum mixture and layer them in a baking dish.
Spread half of the mascarpone mixture over the ladyfingers.
Repeat with another layer of soaked ladyfingers and the remaining mascarpone mixture.
Dust the top with cocoa powder before chilling in the fridge overnight.
