Soak gelatin in cold water until softened, about 5 minutes.
Heat lemon juice and water in a saucepan over low heat until warm, then stir in sugar until dissolved.
Remove from heat and add softened gelatin, stirring until fully dissolved.
Let the mixture cool slightly, then fold in mixed berries gently.
Pour half of the berry mixture into the prepared pan, smoothing the top.
Chill in the refrigerator for about 30 minutes until set.
Once set, layer mint leaves over the mixture.
Pour the remaining berry mixture on top, smoothing it out.
Cover with the overhanging plastic wrap and chill for at least 4 hours or overnight.
To serve, lift the terrine from the pan using the plastic wrap and slice into pieces.
