Add sugar and vanilla extract to the egg yolks and mix.

Whip the egg whites, add the sugar in two portions and whip to make a meringue with soft peaks.

Add egg yolk mixture to the meringue and fold it in gently.

Mix flour, cornstarch, and baking powder until no lumps remain.

Transfer it to a piping bag and pipe it into a pan horizontally, sprinkle powdered sugar and bake in a preheated oven (180°C) for about 10-13 minutes.

Mix sugar and instant coffee powder in warm water, transfer to a large bowl and cool.

Place the bowl containing egg yolks on top of a pot of boiling water, add sugar and vanilla, stir till the yolks are slightly warm.

Take the bowl out of the pot and whip until the yolk becomes light.

Add in mascarpone cheese and mix, then add whipped cream and mix again.

Place coffee-soaked lady fingers in a container, top with cream, and level. Repeat 2 more times.

Refrigerate for at least 3-4 hours or overnight.

Decorate with whipped cream, and sift cocoa powder on top.
