1

Marinate 2 pounds of Chuck roast beef with 3 teaspoons of curry powder, 2 teaspoons of jerk seasoning, 3 teaspoons of Cajun seasoning, 2 teaspoons of garlic powder, 2 teaspoons of onion powder, and 2 teaspoons of black pepper; let sit in the refrigerator overnight.

2

Drain and rinse canned pigeon peas, then add 3 cups of fresh water to a pot and bring to a boil with garlic until tender.

3

In a separate pot, heat 3 tablespoons of canola oil and add the marinated beef to create a nice sear.

4

Transfer the beef to a 5-quart pressure cooker, adding enough water to cover the beef, and pressure cook for 12-15 minutes.

5

While the beef is cooking, add 1 can of coconut milk to the boiling pigeon peas, along with 1 tablespoon of salt and additional water if needed.

6

Once the coconut milk is boiling, add 4 cups of washed rice and cover the pot, reducing heat to low to let it steam for 10-15 minutes.

7

After the beef is done, add chopped scallions, thyme, sweet bell pepper, and diced potatoes to the pressure cooker, and simmer for about 8 minutes until tender.
