4 large whole wheat tortillas
1 cup mixed vegetables (bell peppers, carrots, onions, etc.)
1/2 cup boiled potatoes, mashed
1/2 cup paneer, crumbled
1/4 cup green chutney
1/4 cup yogurt (optional)
1 tsp cumin powder
1 tsp garam masala
1/2 tsp red chili powder
Salt to taste
2 tbsp oil for cooking

Heat oil in a pan over medium heat.

Add the mixed vegetables and sauté for 3-4 minutes until slightly tender.

Stir in the mashed potatoes, crumbled paneer, cumin powder, garam masala, red chili powder, and salt. Cook for another 2-3 minutes.

Remove the mixture from heat and let it cool slightly.

Take a tortilla and spread a tablespoon of green chutney on it.

Place a portion of the vegetable mixture in the center of the tortilla.

If using, add a dollop of yogurt on top of the vegetable mixture.

Fold the sides of the tortilla over the filling and roll it tightly to form a wrap.

Repeat with the remaining tortillas and filling.

Heat a non-stick pan and lightly toast each wrap on both sides until golden brown.

Serve hot with extra green chutney or yogurt on the side.
