Ingredients

  • 4 large whole wheat tortillas
  • 1 cup mixed vegetables (bell peppers, carrots, onions, etc.)
  • 1/2 cup boiled potatoes, mashed
  • 1/2 cup paneer, crumbled
  • 1/4 cup green chutney
  • 1/4 cup yogurt (optional)
  • 1 tsp cumin powder
  • 1 tsp garam masala
  • 1/2 tsp red chili powder
  • Salt to taste
  • 2 tbsp oil for cooking

Instructions

  1. 1Heat oil in a pan over medium heat.
  2. 2Add the mixed vegetables and sauté for 3-4 minutes until slightly tender.
  3. 3Stir in the mashed potatoes, crumbled paneer, cumin powder, garam masala, red chili powder, and salt. Cook for another 2-3 minutes.
  4. 4Remove the mixture from heat and let it cool slightly.
  5. 5Take a tortilla and spread a tablespoon of green chutney on it.
  6. 6Place a portion of the vegetable mixture in the center of the tortilla.
  7. 7If using, add a dollop of yogurt on top of the vegetable mixture.
  8. 8Fold the sides of the tortilla over the filling and roll it tightly to form a wrap.
  9. 9Repeat with the remaining tortillas and filling.
  10. 10Heat a non-stick pan and lightly toast each wrap on both sides until golden brown.
  11. 11Serve hot with extra green chutney or yogurt on the side.

  • 1/4 cup yogurt
  • 1 tsp cumin powder
  • 1 tsp garam masala
  • 1/2 tsp red chili powder
  • 1/2 tsp salt
  • 1 tbsp oil
  • 1 tbsp lemon juice
  • Fresh coriander leaves, chopped (for garnish)

Instructions

  1. 1Heat oil in a pan over medium heat.
  2. 2Add the mixed vegetables and sauté for 5-7 minutes until they are tender.
  3. 3Stir in the cumin powder, garam masala, red chili powder, and salt. Cook for another 2 minutes.
  4. 4Remove the pan from heat and add the grated paneer and lemon juice. Mix well.
  5. 5Warm the whole wheat tortillas on a skillet for a few seconds on each side.
  6. 6Spread a tablespoon of yogurt on each tortilla.
  7. 7Place a portion of the vegetable mixture on one side of the tortilla.
  8. 8Roll the tortilla tightly to form a wrap.
  9. 9Cut the wrap in half and garnish with fresh coriander leaves.
  10. 10Serve immediately with extra yogurt or chutney on the side.
