1

Select and wash 500 grams of fresh spinach, then chop it.

2

In a pot, heat 2 tablespoons of oil.

3

Add whole spices: 4 cloves, 4-5 green cardamom, 2 cinnamon sticks, 1 star anise, and whole cumin seeds to the hot oil.

4

Add chopped ginger and sauté briefly.

5

Add 2 chopped tomatoes and 4-5 green chilies; sauté until the tomatoes are soft.

6

Add the chopped spinach to the pot and stir well with the spices.

7

Season with salt to taste and mix thoroughly; the spinach will release some water.

8

Remove from heat and let it cool slightly before transferring to a mixing jar.

9

Add chopped coriander leaves to the spinach mixture for extra flavor.

10

Blend the spinach mixture until smooth.

11

In the same pot, heat 2 tablespoons of oil again.

12

Cut the paneer into small cubes and add them to the hot oil; sauté lightly without overcooking.

13

Add half a glass (about 1 cup) of water and a pinch of salt to the paneer and let it soak briefly.

14

Remove the paneer from the water and add it back to the pot with the spinach mixture.

15

Add a little more water if needed and stir well to combine.

16

Add 1 tablespoon of sugar to balance the flavors.

17

Cook for a few minutes until the mixture thickens and the flavors meld together.

18

Turn off the heat and serve the palak paneer hot with roti or rice.
