Cut the onion in half and then into large chunky pieces, around 1 cup.

In a mixing bowl, add 2 tbsp plain yogurt, 1 tbsp ginger garlic paste, 1 tsp cumin powder, 1 heaped tsp Kashmiri chili powder, 1 tsp coriander powder, 1 tsp garam masala powder, 1 tbsp besan, 2 tsp mint chutney (optional), a pinch of crushed carom seeds, 1-2 tsp crushed kasoori methi, salt to taste, black pepper, and 1/2 tsp chaat masala powder.

Heat mustard oil until smoking and add to the marinade.

Add the paneer, onion, and capsicum to the marinade and mix well to coat everything.

Marinate for 10-15 minutes, optionally longer, while smoking the paneer with coal for authentic flavor.

Skewer the marinated vegetables and paneer, alternating between them on each skewer.

Heat a grill pan and coat it with 2 tsp mustard oil until smoking.

Place the skewers on the hot grill pan and cook until charred marks appear, being careful not to overcook the vegetables to keep them crispy.
