1 teaspoon turmeric

1 tablespoon kasuri methi
1 cup thick yogurt
2 tablespoons roasted besan
2 tablespoons mustard oil
2 tablespoons heavy cream
1 tablespoon lemon juice
1 tablespoon oil or butter

Cut paneer, bell peppers, and onions into approximately 1-inch cubes.

Roast a big batch of besan on low flame until it releases a nutty aroma and turns a little brown, then let it cool.

Heat mustard oil and let it cool before using.

In a big bowl, add ginger garlic paste, spices, kasuri methi, very thick yogurt, roasted besan, cooled mustard oil, heavy cream, and lemon juice to create the marinade.

Mix everything well and taste check the marinade for concentration and salt.

Add the paneer and veggies to the marinade and coat well gently with a spatula or fingers.

Cover the bowl and place it in the fridge for at least 2 hours or up to 2 days to infuse flavors.

Preheat the oven to 480°F (about 250°C).

Line a baking pan with foil and generously grease it with oil.

Thread the marinated paneer and veggies onto skewers and place them over the baking pan.

Brush the skewers with oil or butter to prevent drying out in the oven.

Bake on the middle rack for 10 minutes, turning the skewers once in between.

Switch on the broil to high and place the tray on the topmost rack to char the tikka.

Keep a close eye on them as they can burn quickly, checking at the 30 to 35 second mark after broiling.

Carefully take them out of the oven and slide them onto a plate.

Serve with green chutney and salad.
