1

Welcome to my cooking show, I'm Hema Subramanian. Today, I'm sharing a delicious restaurant-style Paneer Tikka recipe.

2

For the marinade, add 400 grams of fresh paneer to a bowl.

3

Add 1/2 teaspoon turmeric powder, 2 teaspoons red chili powder, 1/2 teaspoon black pepper, and 1 teaspoon salt to the bowl. Adjust spices to taste.

4

Add 1 1/2 teaspoons coriander powder, 1 1/2 teaspoons cumin powder, 1 teaspoon garam masala, 1 teaspoon chaat masala, and 1 1/2 teaspoons ginger-garlic paste to the bowl.

5

Squeeze the juice of 1 lemon into the marinade.

6

Add 1 teaspoon kasuri methi, 2 teaspoons corn flour, and mix everything until creamy and smooth without lumps.

7

Cut 600 grams of fresh paneer into large cubes, about 200 grams each.

8

Remove seeds from 2 bell peppers and cut them into wedges. Cut 2 onions into wedges and separate the layers.

9

In a bowl, layer the bell pepper wedges, onion wedges, and paneer cubes.

10

Pour the marinade over the paneer and vegetables, and mix gently with your hands to coat everything evenly without breaking the paneer.

11

If preparing ahead, marinate the paneer and vegetables a day in advance and refrigerate, or marinate at room temperature for 2-3 hours before cooking.

12

Skewer the paneer and vegetables onto skewers, alternating them. Use longer skewers if needed.

13

Grease a tawa (flat pan) with oil or ghee and heat it.

14

Place the skewers on the tawa and cook for about 2 minutes on one side, then turn to cook the other side.

15

Rotate the skewers to cook all sides evenly, brushing with oil as needed.

16

Sprinkle some chaat masala on top before serving. Serve hot with mint chutney.
