Traditionally enjoyed at gatherings and celebrations, it has gained popularity in restaurants and homes worldwide, often served as a starter or snack. Today, variations include different vegetables and proteins, appealing to diverse palates.

Take a large bowl and add 1/2 cup thick yogurt, ensuring it has no water.
Add 1/2 teaspoon salt, 1/2 teaspoon chaat masala, 1/2 teaspoon roasted cumin powder, 1/4 teaspoon black pepper powder, and 2 teaspoons Kashmiri red chili powder to the yogurt.
Optionally, add food color as used in restaurants.
Add 2 teaspoons roasted gram flour and 1 tablespoon ginger-garlic paste to the mixture.
Squeeze in the juice of 1/2 lemon and mix everything well. Taste the marinade and adjust spices if needed.
Heat 2 tablespoons mustard oil until hot and add it to the marinade, mixing thoroughly.
Cut 200 grams of paneer, 1 onion, and 1 bell pepper into equal-sized pieces.
Coat the paneer, onion, and bell pepper pieces in the marinade thoroughly.
To infuse a tandoori flavor, place burnt coal in a bowl, drizzle ghee over it, and cover for 30 minutes to allow the paneer to marinate.
After 30 minutes, mix the marinade again gently.
Thread the marinated paneer, onion, and bell pepper onto skewers alternately.
If you don't have skewers, you can cook directly in a frying pan or use wooden skewers.
Turn on the smallest burner on the gas stove and cook the skewers, rotating them evenly to avoid burning, until cooked through.
Once cooked, carefully remove the pieces from the skewers and garnish with fresh coriander, serve with spiced onions and lemon juice.
