paneer, cut into small cubes- 250 gms
red chilli powder- 1/2 tsp
salt- 1/2 tsp
all purpose flour (maida)- 4.5 tbsp
corn flour/starch- 4.5 tbsp
water- 6-7 tbsp
garlic, chopped- 1 tbsp (4 cloves)
ginger, chopped- 1 tbsp
green chillies, sliced- 3-4
onion petals- 1 small onion (60 gms)
green pepper(capsicum)- 1 medium (70 gms)
red pepper (capsicum)- 1 medium (70 gms)
spring onion greens, chopped, for garnish- 4 tbsp
dark soy sauce- 2 tsp
tomato sauce- 3 tsp
red chilli sauce- 2 tsp
white vinegar- 1 tsp
salt- pinch for seasoning
crushed pepper- 1/2 tsp
oil for frying (take out 2 tbsp for sautéing)
cornflour slurry- 1 tsp corn flour in 3 tbsp water

Cut the paneer into small cubes. Mix salt & red chilli powder and set aside for 15-20 mins.

Make a thick batter by mixing the all purpose flour (maida) & corn flour with water. Set aside.

Peel & chop the garlic & ginger, spring onion greens and slice the green chillies.

Take out the onion petals, cut the peppers (green & red capsicum) into cubes.

Heat oil in a pan to shallow fry the paneer.

Once medium hot, dip the paneer pieces in the batter and drop them side by side in oil. Flip and stir on medium heat for 3 mins till they are golden in color. Take out in a plate and set aside. Repeat for the rest.

Heat 2 tbsp oil in a wok or kadhai.

Add chopped garlic & ginger and give a stir for 15 secs on high heat.

Now add the sliced green chillies and the onion petals. Mix and sauté on high heat for 1 min.

Add the cubed peppers (capsicum), give a mix and add the salt to season and crushed pepper. Mix and sauté on high heat for 2-3 mins.

Now add all the sauces, mix and stir fry on high heat for 1 min.

Add all the fried paneer pieces and stir-fry on high heat for 1 min.

Now add the corn slurry, give a mix and stir fry on high heat for 1 min.

Garnish with chopped spring onion greens, stir fry for 15 secs and serve hot.
