Heat ghee in a pan and add cumin, fennel, coriander seeds, black pepper, dry red chili, bay leaf, cinnamon, cloves, and cardamom for seasoning.

Add red chili powder, turmeric powder, and chopped tomatoes, cook until tomatoes soften.

Mix in curd with red chili powder and coriander powder, then add to the pan.

For Paneer Jalfrezi, heat oil, add cumin seeds, chopped onion, and ginger-garlic paste, sauté until fragrant.

Add chopped tomato, coriander and cumin powder, red chili powder, turmeric powder, and garam masala, cook until well combined.

Stir in tomato puree and salt, and let simmer.

In another pan, heat oil, add cumin seeds, onion, green chilies, capsicum, and carrot, sauté until tender.

Add the prepared gravy and paneer strips, mix well and cook for a few minutes.
