3 green cardamoms
1 star anise
2-3 cloves
1 cinnamon stick

Add 2-3 tablespoons of water and 1/2 cup of water, mix again.

Add a pinch of garam masala and cover the pan for 2-3 minutes to let the spices cook.

Prepare the dum aloo by taking small boiled potatoes, peeling them, and mixing with 2-3 tablespoons of mustard oil, 1/4 tablespoon turmeric powder, 1/2 tablespoon Kashmiri red chili powder, and salt.

Fry the potatoes in hot oil until golden brown, flipping them occasionally.

Add 3 tablespoons of the prepared spice paste to the fried potatoes and mix well for 3 minutes.

Add water according to desired gravy consistency, cover, and cook on low flame for 5-6 minutes.

Check the gravy consistency and cook for an additional 2-3 minutes if needed.

For the matar paneer, heat oil in a pan and fry 250 grams of paneer cubes for 2-3 minutes until lightly browned.

Add the remaining spice paste to the paneer and mix well, cooking for 3-4 minutes on low to medium flame.

Add frozen peas and mix, cooking for an additional 2-3 minutes until the peas are cooked.
