1

Wash the spinach leaves thoroughly in clean water 2-3 times and drain.

2

In a pan, add 1/2 cup of water and 1/2 teaspoon of sugar and 1/2 teaspoon of salt, then add the spinach.

3

Cook the spinach on medium flame for about 10-15 minutes until it changes color and wilts down.

4

Remove the spinach from the heat and let it cool down before blending it into a smooth paste.

5

In a bowl, combine the spinach paste with 200 grams of grated paneer, 1/2 teaspoon chili powder, 1 teaspoon chaat masala, 1 teaspoon roasted cumin powder, and 1/2 teaspoon salt.

6

Mix everything well and form small balls from the mixture.

7

Heat 4 tablespoons of oil in a pan, then add 1/2 teaspoon cumin seeds and fry until fragrant.

8

Add the kofta balls to the hot oil and fry until they turn golden brown, then remove and drain on paper towels.

9

In the same pan, add 1/2 teaspoon red chili powder, 1 teaspoon cumin powder, 1 teaspoon turmeric powder, and 1 teaspoon black pepper powder, and sauté for a couple of minutes.

10

Add chopped onions and sauté until they become translucent.

Add the cooked tomatoes and sauté until they are soft and separate from the oil.

Switch off the heat and let the mixture cool down, then blend it into a smooth paste.

13

Return the blended mixture to the pan, add 1/2 cup of water, and cook on medium flame for about 15 minutes until it thickens.

14

Add 1 tablespoon of cream and mix well, then switch off the heat.
