Chop 8 vine tomatoes and add them to the slow cooker.

Add finely diced onion and minced garlic to the slow cooker.

Add 2 tablespoons of tomato paste to the mixture.

Sprinkle in some brown sugar to cut the acidity of the tomatoes.

Pour vegetable broth over the mixture in the slow cooker.

Put the lid on the slow cooker, set it to high, and let it simmer for 3 to 4 hours.

After simmering, stir in freshly grated Parmesan cheese.

Add cream to the soup; you can substitute with milk or omit it entirely.

Use an immersion blender to blend the soup until smooth.

Garnish with fresh basil before serving.
