Traditionally served as a starter or light meal, it highlights the simplicity of eggs and broth, making it a staple in many households. Soak dried Chinese black mushrooms or shiitake mushrooms in hot water until rehydrated.
Cut off and discard the tough end of the mushrooms and chop them up.
Boil chicken stock in a pot.
Add Chinese wine, chopped ginger, and the chopped mushrooms to the boiling stock.
Mix water with corn starch to create a thickener and add it to the soup.
Season with white pepper to taste.
Whisk an egg in a bowl and slowly drizzle it into the soup while stirring to create delicate egg clouds.
Add minced green onion to the soup before serving.
