Heat olive oil and butter in a large pot over medium heat until melted.

Add chopped onion, garlic, celery, and carrots; sauté until softened, about 5 minutes.

Pour in lobster stock and add bay leaves and thyme; bring to a simmer.

Stir in crab meat and cook for 3-4 minutes until heated through.

Add heavy cream and season with kosher salt and black pepper; stir to combine.

Simmer for an additional 2-3 minutes until heated thoroughly.

Remove bay leaves and discard; garnish with chopped parsley before serving.
