Cold Spanish Gazpacho Soup

Originating from the Andalusian region of Spain, gazpacho is a refreshing cold soup made primarily from tomatoes and other fresh vegetables. Traditionally served during hot summer months, it reflects the region's agricultural bounty and is often enjoyed as a light meal or appetizer. Today, gazpacho has gained international acclaim and has numerous variations, adapting to local ingredients and preferences.

Whole grain bread adds fiber while croutons are more affordable.
Soak stale whole wheat bread in water for 5 minutes.
Chop tomatoes and puree them, then strain to remove seeds and skin.
Squeeze out excess water from the soaked bread and set aside.
Blend the bread with 1/3 cup of the tomato puree and minced garlic.
Add the rest of the tomato puree, finely chopped green chili pepper, cumin powder, and sea salt to the blender.
Blend until smooth and creamy, then slowly pour in extra virgin olive oil and red wine vinegar while blending.
Taste and adjust flavors as needed.
Chill the soup in the refrigerator before serving.
Garnish with freshly chopped tomatoes, onion, cucumber, and green chili pepper.
