Heat milk in a saucepan over medium heat until steaming.
Whisk in sugar, cornstarch, and vanilla until smooth.
Cook mixture, stirring constantly, until thickened, about 5-7 minutes.
Remove from heat and stir in lemon zest and cinnamon.
Pour the mixture into a greased dish and let cool completely.
Once set, cut into squares or rectangles.
Dredge each piece in flour, then dip in egg yolks, and coat with bread crumbs.
Heat oil in a frying pan over medium heat until shimmering.
Fry the coated pieces until golden brown, about 2-3 minutes per side.
Remove from oil and drain on paper towels.
Serve warm, dusted with sugar or cinnamon.
