Prepare the ingredients: clean the crabs, measure out the ginger paste, garlic paste, tomato sauce, chili paste, thick coconut milk, oil, capsicum chilies, lemon grass, lime/citrus leaves, egg, sugar, and salt.
In a pan, heat the oil and sauté the ginger and garlic paste until fragrant.
Add the chili paste and tomato sauce, stirring to combine.
Introduce the cleaned crabs to the pan, coating them in the sauce.
Pour in the thick coconut milk and bring to a simmer.
Add the chopped capsicum, lemon grass, lime/citrus leaves, sugar, and salt to taste.
Crack the egg into the mixture and stir well.
Cook until the crabs are fully cooked and the sauce has thickened.
Serve hot.
